The space dedicated to those who actually make Parma Ham.

To the creators of this great success who know how to put all their passion and experience in their work to obtain… an emotion in every slice!

The Citadel will be hosting a number of individual stands of great Parma Ham factories that will meet the public and the press to talk about their production, and share the incredible adventure that brings Parma Ham around the world.

Tastings, guided tastings, meetings and taste workshops to discover the secrets of the “Prince” of Italian deli meats together with the master producers of Prosciutto di Parma PDO.

There will be stands of different ham production sites where you can meet the producers of Parma Ham… and more.

Sensory meeting: iconic products with ancient origins.

PROSCIUTTO DI PARMA PDO – Parmigiano Reggiano PDO – Malvasia Aromatica di Candia (Colli di Parma Malvasia DOC). Three events throughout the day to find out more about the ancient products of excellence of Our Territory that are now recognized as Denominations of Origin.

FIRST EVENT. A special selection of PROSCIUTTO DI PARMA PDO. Hosts:

  • 12-month Parmigiano-Reggiano DOP + sparkling Colli di Parma Malvasia DOC;
  • 24-month Parmigiano-Reggiano PDO + still Colli di Parma Malvasia DOC;
  • 36-month Parmigiano-Reggiano PDO + Passito di Malvasia Aromatica di Candia

SECOND EVENT. A special selection of PROSCIUTTO DI PARMA PDO hosts:
MALVASIA DI CANDIA AROMATICA – FROM THE PELOPONNESE TO OUR HILLS.

The reconstruction of the ancient and fantastic journey from Monemvasia to Crete (Candia) and finally to Venice and Parma, in the holds of the ships of the Venetian Merchants who saved it from extinction by bringing it to different European regions. Comparative tasting of some of the modern wines obtained from the varietals descending from the ancients cuttings of Malvasia Aromatica di Candia.

THIRD EVENT. Relaxing with PROSCIUTTO DI PARMA PDO and Malvasia di Candia: a Malvasia for all Prosciuttos or each Prosciutto with its own Malvasia? 16-18 month PROSCIUTTO DI PARMA PDO and sparkling Colli di Parma Malvasia DOC;
24-month PROSCIUTTO DI PARMA PDO and still Colli di Parma Malvasia DOC;
36-month PROSCIUTTO DI PARMA PDOand Colli di Parma Malvasia DOC Metodo Classico.
