Followed by a meeting with teachers and the Head of the Food Museums Educational Programmes, Roberta Mazzoni, in order to present the Museum’s school initiatives. Free admission. PARMA HAM MUSEUM: Presentation of the Museum’s new multimedia installation and donation of the stone “Prosciutto” by the sculptor Marcello Rigucci. Guided tour with the Food Museums Coordinator. Free admission. (Via Bocchialini, 7).
6pmPARMA HAM, HOW IT’S MADE – DEMONSTRATION OF THE PRODUCTION STAGES. Some of the production stages will be explained and shown live (salting, greasing, deboning, spiking and fire-branding with the Ducal Crown) in collaboration with IPQ (Parma Quality Institute). Presented by the journalist Francesca Romana Barberini.

THROUGHOUT THE DAYTHE CITADEL OF PARMA HAM. Tastings, guided tastings, meetings and taste labs to discover the secret of the King of Italian hams together with the master producers of Prosciutto di Parma PDO. There will be stands of different ham production sites where you can make the producers of Parma Ham… and more. At the SPACCIO DI PARMA stand visitors can buy Parma Ham in its special Festival edition. Music and entertainment in the evening. (Via del Popolo).
DRY-CURED HAMS FROM AROUND THE WORLD, AT THE COURT OF HIS MAJESTY PARMA HAM. The Citadel of Parma Ham will host some of the most important national and international producers of dry cured hams.
FINESTRE APERTE (OPEN WINDOWS). The production sites open their doors to visitors. The shuttle bus leaves from Piazzale Corridoni. Times: 10am -1pm / 3pm – 7pm.
