Tasting workshops in Langhirano and Lesignano dè Bagni

This year too, the Associazione inOtio (inOtio Association) (www.inotio.it) is organizing tasting workshops on the occasion of the Parma Ham Festival.

The first meeting will be held on Saturday 11 September at 19:30 at the Centro Culturale (Cultural Centre) of Langhirano. Master delicatessen sellers will tell you about the curer’s hard but fascinating trade and let you taste unforgettable Parma Hams. The workshop will be conducted and animated by the great actor Stefano Bicocchi, whose stage name is “Vito”. In combination: long-cured Parma Hams and different cuts, wines of the Confraternita dei Vignaioli della Torrechiara (vine-dressers’ confraternity of Torrechiara) and breads made with ancient wheats.

Sunday 12 September at 12:30, again at the Centro Culturale (Cultural Centre) of Langhirano, the second workshop will be held and animated by star-rated chef Alberto Rossetti of the Al Tramezzo restaurant in Parma (www.altramezzo.it) who will present 2 fantastic rolls: “Roll with smoked prawns and mature Parma Ham with creamed potato” and “Quello dolce è di Parma” (the sweet one is Parma Ham) that met with success at the Club Sandwich Contest that the Parma Ham Consortium organized at the Four Seasons in Milan a few months ago.

Wednesday 15 September at 20:30, the last of the three workshops organized by inOtio will be held at the Museo del Norcino (pork butcher’s museum) in Lesignano dè Bagni. Three important great Traditional Method wines, selected by the “Il Bere Alto” wine merchant’s, will also be protagonists together with Parma Ham and local wines. The star-rated chef Alberto Rossetti will again be present and will prepare a special pumpkin mixture for the occasion.
Cost of the tastings: 20 euro in Langhirano, 25 euro in Lesignano dè Bagni.
