Pierluigi Pelosi Crowned “Master Ham Carver 2009”

September 2009 - Yesterday in Langhirano the ham hand-carving competition was held. Eight Parma Ham producers, armed with vice and knife, competed in carving by hand on the stage in the main piazza of Langhirano. A test of precision, which consists of getting as close as possible to the weight required by the jury: in this case 250 grams. The participants in the competition were: Alberto Paterlini of the prosciutto factory San Pietro, Attilio Tosini of the Giancarlo Tanara Prosciutto Factory, Alessandro Gardelli of the Giovanni Ferrari Prosciutto Factory, Andrea Barbieri of the Enzo Barbieri Prosciutto Factory, Avi Dominichini of the Egidio Bedogni Prosciutto Factory, Federico Galloni of the Fratelli Galloni Prosciutto Factory, Pierluigi Quintavalla of the Monica & Grossi Prosciutto Factory and the winner, Pierluigi Pelosi of the Casale Prosciutto Factory. The expert panel also awarded two other prizes: the “precision slicer” award, to Avi Dominichini, and the award for “best presentation” to Alberto Paterlini, for his refined and elegant arrangement.
